Black Donkey No.2:
We’re proud to work with local Craft Brewers whose beer we enjoy - we collaborate and help each other out on different levels, and one of those is beer cask finishes.
This collaboration is with our friends in Black Donkey Brewing in Ballinlough, Co. Roscommon. Husband and wife team Richard Siberry & Michaela Dillon have been producing some amazing beers since they set up approximately 10 years ago. Their range of Irish Farmhouse Ales (saisons), wild yeast beers and cask aged specials are well worth seeking out.
The Whiskey:
This is a 5 year old Double Distilled Single Malt from Great Northern Distillery. It’s limited to 312 bottles and is bottled at 43% abv.
The Maturation:
GND Double Distilled Single Malt Matured in a first fill Bourbon cask for 5 years and finished by us in a cask that previously held Black Donkey’s Rubicon, a limited edition robust ale, for 15 weeks.
Nose:
Raspberry ripple ice cream, freshly baked sponge cake.
Taste:
Fruity with citrus and raspberry sherbet, with black pepper spice and raspberry jam.
Finish:
Dryer than expected but long with fruit and lots of spice.

Bart’s Range
On our fantastic journey, the founders have increasingly missed the influence and guidance of their late dad, Bart. When it came to releasing a new blended product, there was an obvious parallel — the complexity of the blend mirrored the complexity of a clock. Bart understood from hours of work that each component of the clock was as important as the next, regardless of size. Similarly, in Bart’s Blended Whiskey Series, each component works in harmony with the others to create the final result: a series of intricate, flavour-driven whiskies, a series truly worthy of being named in Bart’s honour.
